Cream Puff Pastry

Ingredients: 1 unit of puff pastry dough
Pastry Cream: Milk Eggs Sugar White flour Vanilla Grinded lemon peel
Culinary Filling: 300grs of Raspberries Glass sugar 1 small cup of cognac 250 ml milk cream
Preparation Prepare the pastry puff dough and put on a side. Cut proportionately into 3 pieces and cook in the preheated oven at a high flame. On a side make the pastry cream with the milk, flour, 2 egg yokes and sugar. Leave it cooling off. Wash out the raspberries and leave them amalgamating for 30min in a pot with 3tbsp of sugar and 1 small cup of cognac. Right before serving the cake whop the milk cream until it thickens. In the oven pan place one of the pastry puff discs, pouring the pastry cream on top, leveling it down with a spatula. Cover this with the second disc, which you cover with the whipped cream and some of the raspberries. Repeat this operation with the 3rd puff disc and using the spatula cover the border with the whipped cream.
