Cooked Peaches with Ice-cream

Ingredients
Almond Crisps
150 gr glazed sugar
35 gr flour
1 orange
25 gr ground almonds
40 gr butter

Ice-cream
250 ml milk
1 lemon
1 cinnamon stick
100 gr glazed sugar
2 eggs

Cooked Peaches
800 gr peaches
1 tbspn butter
100 gr glazed sugar

Decoration
Ground cinnamon

Ingredients
Start with the crisps; in a bowl place the glazed sugar, flour, ground almonds, grated orange peel, orange juice and melted butter. Mix well until you have a smooth batter and let it sit for 30 min.

Place baking paper over a pan. Put small lumps of the crisps dough. Spread them out until they are real thin. Bake the crisps at 190C for 5 min, until they golden a bit.

For the whipped cream; boil the milk in a pot with the cinnamon & lemon peels. Boil and take it off the fire, let it sit for 1 hour. Sift the preparation and store in the freezer.

Whisk 2 egg whites until stiff. Once the whipped cream starts hardening in the fridge add it to the eggs and mix slowly. Store back in the freezer.

Peel the peaches and split in half. Take the core out and cut in half again.

Cook the sugar and butter until it melts and forms a caramel. Add the peaches and mix. Place the ice-cream in the middle of the plate, put the crisps around it, decorate with the peaches and caramel and powder with cinnamon.
