Ingredients
250 grs flour
75 grs sugar
1 teaspoon of baking powder
125 grs butter
1 egg
Milk
Cranberry marmalade
Filling
3 egg yolks
1 teaspoon of water
60 grs sugar
3 egg whites
40 grs sugar
30 grs flour, cornstarch
½ teaspoon of baking powder
100 grs chopped dates
1 teaspoon of flour
75 grs melted butter
Preparation
- In cooking bowl mix flour, sugar, baking powder melted butter, milk and egg, mix all the ingredients until obtaining smooth dough. Butter the pan, with butter or oil, cover the pan with ¾ of the dough, and spread the cranberry jelly over the button of the dough.
- In a small cooking bowl beat egg yolks and water until obtaining a spongy cream, add 60 grs of sugar and keep beating for 5 more minutes. Beat egg whites and gradually add 40 grs of sugar keep beating until they turn snow white. Add egg whites to the beaten egg yolks add sift flour and cornstarch, chopped dry fruit, while mixing add the melted butter, beat all the ingredients until it turns in to a smooth cream.
- Pour the cream over the dough and jelly cover the pie wit the left over dough, bake for 35 minutes. Remove from the oven. Let cool down before serving.
