Christmas Ice Cream Pudding

Ingredients
1 liter of ice cream of macadamia nuts or vanilla, at normal temperature
Christmas pudding, cut in slices
Brandy sauce
Caramel sauce, for serving

Preparation

  1. This recipe turns a store bought pudding, or even the leftovers of one, into a delicious dessert.
  2. Put the ice cream in a deep big round bowl and smoothen the surface which should reach over half of the bowl. Cover it with pudding slices by firmly putting pressure on them. Do not leave any holes between the ice cream and the pudding, and extend it so that it is right up against the edges of the bowl. Cover it with aluminum foil or plastic wrap and put it in the refrigerator until it settles.
  3. Flip the pudding over onto a flat plate (if necessary you can use a little bit of hot water under the bowl to loosen it a little). Spread brandy sauce over the top of the ice cream and on the sides until it is totally covered. Put it back in the refrigerator until the brandy sauce hardens.
  4. Cover it with plastic wrap or aluminum foil and making sure to press it well against the surface. Keep it in the refrigerator until it is time to serve it out. Cut out portions as if it were a cake and accompany it with caramel sauce when taking it to the table.
