Chocolate Pudding

Ingredients
2 egg yolks
4 tablespoons of sugar
½ liter of milk
40 grams of starch
100 grams of bitter chocolate tablets
1 vanilla stick
1 egg white
A pinch of salt
2 tablespoons of chopped almonds
Garnish: chopped almonds

  1. Preparation time: 30 minutes
  2. Cooling time: 2 hours

Preparation

  1. Mix the egg yolks with the sugar and beat until you obtain a clear creamy consistency.
  2. Set aside 100 ml of milk and dilute the starch in it.
  3. Grate or chop the chocolate and in a recipient pour the rest of the milk in and add the grated chocolate and the vanilla stick in. Bring this to a boil while mixing continuously.
  4. Remove the vanilla stick from the pot. Add into the milk the diluted starch. Allow the milk to boil for a few more minutes while constantly mixing until it thickens.
  5. Once the milk thickens, take it off the heat. Mix the clear cream.
  6. Beat the egg yolk until it stiffens with the salt. Then fold it into the pudding mixture while it is still hot.
  7. Divide the pudding into four parts and allow it to cool in the refrigerator for at least 2 hours.
  8. Before serving it out, garnish it with chopped almonds.
