Ingredients of Chocolate Foam Recipe
185 grams of white chocolate
30 grams of butter
4 egg yokes
1/3 of a cup of sugar
2 teaspoons of brandy
1 ½ cup of thick whipped cream
Peach Dessert Recipe
440 grams peaches cut in half
2 tablespoon of sugar
1 tablespoon of Cointreau (orange liquor optional)
Preparation of the Dessert
- Foam: Place on fire in a small pot the chocolate and butter, stir till it dissolves and both mixed. Let cool off.
- Place the sugar, egg yokes and brandy in a thermal bowl, placed in a pot with water over the fire, and let it boil slowly and meanwhile go whipping it up till it thickens. Withdraw from the flames but keep mixing till the mixture cools. Mix with the dissolved chocolate and then the cream stir with a slow circular movement. Divide into 8 glasses and refrigerate till firm.
- Peach: Blend the peaches sugar and Cointreau, (if your using it) then strain it. Pour this liquid over the foam, in the glasses or serve it separate.
