Chocolate foam

- Time 15 minutes (plus 4-5 hours of refrigeration)
Ingredients 6 egg yolks 3 egg whites 6tbsp sugar 500gr skimmed milk 1 cup milk 5 very thin natural jell-o leaves ½ pure chocolate bar (without milk)
Preparation
- Beat the egg yolks with 3 tbsps of sugar until they are foamy.
- Dissolve the chocolate with half a cup of milk; once it is completely dissolved add it to the yolks and keep stirring.
- Put the natural jell-o to soak till they are soft and dissolve them in a double sauce pan with the other half cup of milk.
- Add it to the previous mix and mix well.
- Add the skimmed milk and the egg whites with the three other tbsps of sugar.
- Mix carefully and pour into a buttered mold.
- Put in the fridge for 4-5 hours, it’s preferable to prepare the day before serving.
- Before removing from mold, pass a knife on the sides and place it on cold water.
Practical advice Decorate with skimmed milk or meringue.
