Chocolate Chip Mint Ice Cream

The crunchy pieces of crystallized sugar with a mint flavor make this ice cream have a very peculiar texture.

Ice Cream:
4 egg yolks
75 gr. of sugar
570 ml of normal cream
75 gr. of pure chocolate, broken up into little pieces

Crystallized Mint:
4 tablespoons of granulated sugar
4 tablespoons of water
2 small spoons of mint essence

Preparation
Beat the egg yolks and the sugar together until they acquire a thick and creamy consistency. Place the normal cream in a big and heavy casserole and let it cook only until it reaches body temperature. Pour the egg yolks and the sugar on top while beating at it constantly. Pour everything back into the casserole and continue cooking it at low heat, until the cream sticks to the back of a wooden spoon. Be careful; however to not let the cream set. Take it off the stove and then add in the chocolate and mix it until it melts and then beat it well until it has mixed in completely. 

Pour it into a deep bowl, which can be used to freeze, however make sure to first let it cool down; then place it in the freezer for one hour and a half removing it from the freezer two or three times more, and then vigorously beating it with the a wooden spoon.

While the ice cream is freezing, place one more granulated sugar and the water in a small heavy casserole and put it on the stove at low heat, stirring frequently until eh sugar has dissolved. Then increase the heat and boil it quickly to 140 degrees Celsius until you are able to see a string of water that breaks when you sprinkle a little water on it. Remove it from the stove quickly before it caramelizes and add in the mint essence. Quickly pour it over a piece of wax paper and let it sit until it has cooled down completely. Fold the paper on top of the crystallized sugar and crush it with a roller, until it acquires the texture of thick crumbs.

Add in the sugar crumbs to the ice cream, which should be somewhat frozen now and beat them well together; then put it back into the freezer and let it freeze for around 4 hours or until it is very firm. Take it out of the freezer and put it in a normal place in the refrigerator so that it softens slightly and finally add on a bunch of ice cream scoops on each plate with a spoon for the ice cream.  

Serves 6 people.
