Chocolate and Banana Pie
Ingredients 17 whole wheat cookies, ground 1 tablespoon of sugar 3 teaspoons of ground cinnamon 8 tablespoons of melted butter 60 ml of water 3 teaspoons of Jell-O powder 105 grams of chopped chocolate 1 teaspoon of sugar 400 grams of firm tofu 125 ml of double cream 2 small bananas, chopped 1 teaspoon of honey Banana slices, for decorating 30 grams of black chocolate
Preparation
- To prepare the base, mix the ground cookies, the sugar and the cinnamon in a medium sized recipient. Add in the melted butter and put it into a 23 centimeter mold and refrigerate.
- For the filling, put the water in a small pot and add in the Jell-O and let it sit for one minute. Add in the chocolate and the sugar and heat over medium heat stirring constantly until the chocolate melts. Do not let it boil though. Take it off the heat and let it cool for five minutes.
- Mash the tofu in a blender until you obtain a fine cream. Put aside around 90 ml to use for decoration. In the blender, without turning it off, gradually go adding in the chocolate mixture and blend until all the ingredients are mixed in evenly. Then put this into a big recipient.
- Beat the cream in a deep bowl and slowly go adding in the tofu. Place the banana slices over the base of the pie and pour the tofu on top. Then put this in the refrigerator until it becomes firm for around 2 hours.
- To serve, decorate the top of the pie with banana slices. In a small recipient, pour in the tofu and the rest of the honey. Put this in a decorator’s tube and decorate the pie in the center or on the sides. With a vegetable cutter, cut chocolate strips to garnish as well.
