Chicken Stroganoff

A more economic version of the classic Russian beef Stroganoff. Coffee added in gives a little more of an extra taste.

Ingredients:
550 gr. of chicken breast
Salt and pepper
28 gr. of butter
1 big onion, peeled and finely chopped
115 gr. of sliced mushrooms
1 tablespoon of concentrated tomato pure
 4 tablespoons of strong black coffee
¼ teaspoon of dry thyme
140 ml of sour cream

Preparation:
Cut the chicken breasts in thin strips around 6 or 7 millimeters of thickness and around 5 centimeters in length. Spice them with salt and pepper. Melt the butter in a big frying pan and fry the chopped onion in it for 5 minutes. Add the mushrooms in and continue frying it for another 2 minutes.

Increase the heat and then add in the chicken and fry it continually stirring for around 2 or 3 minutes more. Mix the concentrated tomato pure with the coffee and add them into the pan with the thyme. Stir well and continue cooking for another 2 minutes. Add in the sour cream and let it cook at low heat without allowing it to come to a boil. Taste it and add in more spices if needed. Serve with white rice or spaghetti noodles.

Serves 4 people.
