Chestnut Cakes

Ingredients: 100grs of dry peaches 3-4 tbsp of apricot liquor 200grs of chestnut cream 2 ½ tbsp of lemon juice 4 egg whites ¼ of a litter of skimmed milk Block of butter ( for the mold) ¼ of a litter of cream
Preparation Split the peaches in half and marinate them in the apricot liquor for 1 hour. Then combine the peaches together with the chestnut cream and the lemon juice mixing very well. Whip the egg whites well and combine them with the mixture. Now butter up a 20 cm. diameter ceramic cake pan. Pour the dough into the pan and cook for 12min at 150 Celsius degrees. Cut the cake to serve (hot or cold) and pour the cream on top.
