Castile Doughnuts
Ingredients 3 eggs 170 ml sesame or soy oil 170 gr flour 5 gr cornstarch
Frosting 4 eggs 250 gr fine sugar 125 gr gazed sugar
Preparation Using an electric beater, mix the oil, flour cornstarch and eggs. Beat during 20 min until it thickens smoothly.
Using a spatula fit it into a decorating bag with a round tip.
Using the decorating bag, form small round doughnuts over a baking pan. Bake for 30 min at 220C.
For the frosting, pour the fine sugar into pot and mix with the 4 egg whites. Mix over the fire until the sugar melts. Take off the fire and use an electric beater. Add the glazed sugar and continue whipping until you have a thick white frosting.
Dip one side of the doughnut in the frosting, then place them back in the pan with the frosted side up.
Put them back in the oven for 3 min with the oven door open, letting them dry. Dip the other side of the doughnut in the frosting and dry them out gain in the oven.
