Carrot Cake Recipe
Ingredients 2 eggs, slightly beaten 1 cup of pure sugar 1 cup of grated carrots ¾ cup of vegetable oil ½ cup of nuts in pieces ¼ cup of raisins, in pieces ¼ cup of sultanas 1 and ½ cups of sifted white flour 1 teaspoon of varied spices 1 teaspoon of ground cinnamon 1 teaspoon of baking soda 1 and ½ teaspoons of yeast powder
- Preparation time: 30 minutes
- Baking time: 40 to 45 minutes
Preparation
- Preheat the oven at a moderate temperature of 180 degrees C. Grease a rectangular 18 by 28 centimeter in diameter baking mold with melted butter or oil. Cover the base and the walls with wax paper.
- Put the eggs, the sugar, the grated carrot, the oil and the chopped nuts in a big bowl. Stir to mix it well. Add in the rest of the ingredients and stir until they become soaked with the liquid.
- Pour the cake dough into the prepared baking mold and bake for 40 to 45 minutes. Let it cool a little and then put it over a metal rack so that it cools completely. If you want, cover it with curd covering and sprinkle some ground nutmeg over it.
