Caramel Flan

Ingredients: Cream 400 ml milk 2 eggs 3 eggs yokes 150grs of sugar 2tsp of vanilla
Caramel 200grs of sugar Cold water
Preparation Boil the milk and vanilla together. Whip the eggs together with the egg yokes and sugar. Pour the milk into this mixture and mix well. Then strain this paste.
For the caramel pour the sugar in a pot and cook on a low flames stirring it continually. Once it steams and takes color pour 2tbsp of cold water. It has to darken and thicken a bit withdraw from the fire but continue to stir. Pour the caramel into a mold. On top of the caramel pour the cream we already prepared. Place the mold in a larger one and cook it as if it were a double boilers pot for 20min. Let it cool off before withdrawing the flan from the mold and serving it.
