Campaign Cake

Ingredients: 1 Pasta Flora
Filling 250grs of ricotta 120grs wheat 200grs of sugar 60grs of preserved orange and cider Cinnamon Orange blossom ¼ of a liter of milk grated lemon peel 4 eggs Glazed Sugar Salt
Preparation Soak the wheat in water for 3 days, changing the water once a day. Drain the wheat and cook for 15 minutes with some water. Drain the wheat again and cook in another pot with the boiling milk, lemon peel, 1tbsp of sugar and a pinch of cinnamon. Cook on a low flame for about 15min until the wheat soaks up all the milk. In a pot beat the ricotta with a spatula until it turns creamy; to this add the egg yokes, some of the cinnamon, grated lemon peel, the cooked wheat with salt and the orange blossom. Mix well and let it sit. Whip the egg whites until they stiffen and add them to the mixture. With a part of the pasta flora you make a mold, and then pour the ricotta-wheat mixture inside. Cover this with strips of the pasta flora jailing it in. Cook the cake in the oven for an hour at mid flame, withdraw the cake and let it cool off. Then sprinkle the glazed sugar on top.
