Californian Mousse

 

Californian Mousse

Ingredients
3 eggs
1 orange
75gr chocolate without milk
75gr powdered sugar

Preparation

  1. Divide chocolate into pieces, place into a casserole pot with 2 tbsp of water.
  2. Mix it at a low flame mixing always with a wooden spoon until it becomes a soft cream.
  3. Remove from fire and add egg yolks and continue mixing well.
  4. Beat the egg whites till stiff adding powdered sugar little by little.
  5. Peel orange carefully so as to not take off the white skin.
  6. chop the orange peel, separate some of it to cut in thin strips.
  7. Mix the chopped orange peel with the cream and add egg white mix.
  8. Place it all in a dish and decorate the center with orange peel strips
  9. Place in fridge and serve fresh.

Practical advice
The orange peel must be removed without the white skin since it will give it a bitter taste.
