Butter and Fruit Bread Pudding Recipe

Ingredients
60 grams of butter
¼ cup of brown sugar
¾ of a cup of raisins
½ teaspoon of cinnamon
440 grams of canned apples
12 slices of fruit bread, cut and buttered
3 eggs
1¼ cups of milk
¾ cup of thick cream
½ teaspoon of vanilla

Preparation

  1. Melt the butter in a pot, add the sugar and cook on a low flame, don’t stop stirring until the sugar dissolves.  Add the raisins, cinnamon and apples, keep mixing and cook for 1-2 more minutes. Take off the fire and let it cool.
  2. Cut the fruit bread in triangles and arrange 1/3 of them (buttered side up) on the base of an oiled mold for bread pudding.  Place a layer of apple and raisin mixture on top, put another layer of fruit bread, and then put another layer of the apple and raisin mixture and finish with the last layer of fruit bread arranging the triangles.
  3. Whip the eggs, milk, cream and vanilla in a bowl, and then pour the mixture over the bread and apples in the mold. Place this mold in a larger mold, and half way fill this one with boiling water and bake in a double boiler pot for 40-45 minutes. or until the bread pudding is cooked and golden.
