Burned Tart

 

Burned Tart

  • For: 6 servings
  • Time: 90 minutes

 

Ingredients:
4 eggs
130 grs flour
130 grs sugar
Skimmed milk, almonds

Cream
5 egg yolks
400 ml milk
1 tbsp cornstarch
150 grs sugar

Preparation:

  1. Make a Geneva biscuit by beating the eggs with the sugar until fluffy.
  2. Add the sifted flour and mix softly.
  3. Place in a buttered and floured mold and put in a moderate heat oven for 40 minutes.
  4. Place the yolks, sugar and cornstarch in a double sauce pan, mix well and add milk.
  5. Place on fire and mix constantly until it thickens.
  6. Let it cool off and stir every once in a while.
  7. Cut the biscuit horizontally and place the syrup made with one cup of sugar and another of water.
  8. Decorate the sides with the almonds.
  9. Sprinkle the surface with glazed sugar and burn with a hot iron.
  10. Skimmed milk can be placed on the sides to decorate.
