Brioche (Basic Recipe)

  • For: 1 kg of dough
  • Time: 75 minutes

Ingredients:
500 grs flour
15 grs baking soda
2 tbsps milk
450 grs butter
6 eggs
15 grs salt

Preparation:

  1. Remove butter from fridge 1 hour before using it.
  2. Dissolve the baking soda with some tbsps of warm water.
  3. Once it is dissolved, add 100 grs of flour until you make a soft ball.
  4. Fill a big bowl with hot water and place the dough ball in it that will go down to the bottom of the bowl.
  5. Wait till it ferments and it will go up to the surface when it doubles its size.
  6. On the meantime mix the salt with the sugar and milk, add the flour in small amounts, beat with an electric beater.
  7. Add the four eggs, one by one, once these are absorbed add the baking soda and flour mix.
  8. Knead for 15 minutes until it reaches the point of stretching without breaking.
  9. At this point add the butter little by little and knead well.
  10. Sprinkle flour on the sides and bottom of the bowl and let it rest with a flour cloth for ½ hour in a warm area for the dough to grow.
  11. Break it manually, knead and store in the fridge for 2 or 3 hours.
  12. Break the dough again and turn it over, let it rest until the next day,  it will be ready by then.
