Brazilian style Grape & Tapioca Recipe
Ingredients: 1 kg of black ripe grapes 2 cups of sugar 2 cups of tapioca
Preparation: Soak the tapioca for 2 hours.
Wash the grapes and separate the grains placing them in a container, cover them with water and add the sugar. Boil the grapes for 20 minutes at a low flame stirring every once in a while. Once the cooking is finished, strain the grapes and store the liquid obtained. The grapes are passed through the puree maker to separate the skin and the seeds. Add to it the ½ liter of water and place again in the fire for about 15 minutes. Pour the strained tapioca and cook it at a low flame till it thickens. Mix with the juice of the first preparation of the grapes. Remove the mix from the fire, stir well, and place it on a porcelain or glass container. Let it cool in the fridge for at least 12 hours before serving it.
It is decorated with Chantilly cream at the moment of being served.
