As occurs with a great number of stews, it is better if it allowed to sit for awhile, it will help it to be at its best point if it is done the day before and then reheated.
Ingredients:
3 tablespoons of oil
900 gr. of beef
2 big onions, peeled and chopped
2 garlic cloves, minced
2 green peppers, seeds taken out and chopped
28 gr. of flour
145 ml of dry white wine
¼ litre of black coffee
1 teaspoon of dry oregano
Salt and pepper
Preparation:
Heat the oil in a pot and quickly fry the meat until it slightly browns. Take the meat out of the pot and place it on the side on a plate. Add in the onions, garlic, and green pepper to the oil that is left inside the pot and fry it at low heat for 10 minutes.
Sprinkle the flour on top and continue cooking it for around 2 or 3 minutes, frequently stirring. Gradually add in the wine and the coffee while stirring at the same time so that they mix well together until it comes to a boil. Add in the oregano and the spices and place the meat back in with the rest.
Cover and let it boil at low heat for 1 hour and a half or for 2 hours, until the meat is tender. Taste it and add in more spices if needed before serving.
