Blueberry Cake Recipe
Ingredients ½ cup of sugar, plus 1 additional tablespoon 250 grams of fresh blueberries 2 eggs 1 tablespoon of vanilla essence 125 grams of melted butter 1 and 1/3 cup of all purpose flour 2 tablespoons of brown sugar

Preparation
- Preheat the oven at a moderate temperature of 180 degrees C. Grease a round 20 centimeter in diameter mold with melted butter or oil. Cover the base and the walls with wax paper.
- Put 1 tablespoon of sugar and half of the blueberries in a casserole and cook it over low heat. Stir until it the blueberries begin to let off juice. Add in the rest of the blueberries and let the preparation cool.
- Beat the eggs in a big bowl until they thicken. Add in the vanilla essence, the butter, the flour, and the rest of the sugar. Stir with a metal spoon until you obtain a homogenous mixture.
- Put ¾ cup of the mixture in the casserole with blueberries. With a spoon, put the blueberry preparation and the rest of the mixture in the mold. Mix it all up with a skewer to make it have a marbled look and sprinkle it with brown sugar. Bake the cake for 45 to 50 minutes or until when poking a wooden pick in it, it comes out clean. Let it sit for 5 minutes and then place it over a metal rack and let it cool. If you want sprinkle it with confectioner’s sugar.
