Berry Sherbet Recipe

A frozen fruit mixture that is slightly lumpy, called sherbet, can be very refreshing on a hot summer day.

Ingredients
300 grams of varied berries (currants, raspberries, blackberries, blueberries, and strawberries).
50 grams of sugar
1 to 2 teaspoons of limejuice
1/8 of a liter of water
50 grams of solidifying sugar 2:1 (for 2 parts of fruit, 1 part of sugar)
Grated lemon peel of half a lemon (well washed)
½ cup of raspberry liqueur
For decorating: whipped cream, mint cookies

  • Preparation time: 20 minutes approximately
  • Sitting and cooling time: 30 minutes approximately
  • Freezing time: 5 to 6 hours in the freezer

Preparation

  1. Wash the berries (in the case of the raspberries, only if it is needed), strain them and get rid of the stems.
  2. Put the washed berries in a small recipient with the sugar and squeeze the limejuice over them (how much you use will depend on how acidity you want it). Stir and let them sit covered for around 30 minutes, stirring it every once in awhile.
  3. Boil the water for 1 minute with the solidifying sugar and the lemon peel, then take it off the stove and let it cool and settle for at least 30 minutes.
  4. Blend the prepared fruits with the sugar mixture in the blender.
  5. Then strain the blended fruit with a fine strainer and then add in the raspberry liqueur.
  6. Put the mixture in a ½ liter plastic freezer recipient and freeze it for 5 to 6 hours at least  –18 degrees C. Stir it every 30 minutes.
  7. Decorate the finished sherbet, as you like with whipped cream or with mint cookies.
