Basic Glazing Methods
Put the confectioner’s sugar, the additional ingredients, the butter and a lot of liquid in a bowl. Mix well until you obtain a consistent paste. Put the bowl in a double boiler with boiling water until the glazing is homogenous and shiny.
Passion Fruit Glaze Recipe 1 cup of sifted confectioner’s sugar 1 or 2 tablespoons of fresh passion fruit pulp 10 grams of butter
Citrus Glaze Recipe 1 cup of sifted confectioner’s sugar 1 or 2 teaspoons of finely grated lime, orange or lime, your choice 10 grams of butter 1 or 2 tablespoons of freshly squeezed limejuice
Ginger and Lemon Glaze Recipe 1/3 cup of sifted confectioner’s sugar ˝ or 1 teaspoon of ground ginger 20 grams of butter 2 teaspoons of milk 1 teaspoon of limejuice
Chocolate Glaze Recipe 1 cup of sifted confectioner’s sugar 1 tablespoon of cocoa powder 10 grams of butter 1 or 2 tablespoons of hot milk
Coffee Glaze Recipe 1 cup of confectioner’s sugar 1 or 2 teaspoons of instant coffee 10 grams of butter 1 or 2 tablespoons of water
