Banana Jam
Ingredients Bananas, 1 kilogram Lemons, 2 Sugar, 1 kilogram Honey, ½ kilogram Banana essence, to the taste
Preparation Peel and cut the bananas in normal size slices with a plastic or wooden spatula (avoid using metal since it causes the fruit to darken). Squeeze the juice of the lemon over the fruit. Add in the sugar, the honey and the essence. Allow it to macerate for 15 minutes. Cook over high heat without covering and stir continuously. Once the juice has evaporated, lower the heat. Cook for approximately 45 minutes more until the preparation thickens and acquires the desired consistency. Bottle while it is still hot then allow it to cool and store in the refrigerator.
