Ingredients
4 firm and ripe bananas, cut horizontally and vertically in half
2 tablespoons of lemon juice
Frying oil
Dough to Dip In
1 cup of flour
1 teaspoon of baking powder
1 lightly whipped egg
½ cup of a milk
2 tablespoons of sugar
1 egg white
Caramel
½ cup of sugar
½ cup of water
½ cup of thick cream
2 teaspoons of Scotch or Brandy (optional)
Preparation
- Dough: Place the sifted flour with the baking powder in a bowl, and make a hole in the center. Stir the milk, egg and sugar together, and mix with the sifted flour until you obtain smooth dough. Let it rest for 10 minutes.
- Caramel: Place the water and sugar in a small pot, and cook at a low flame, mixing constantly until the sugar dissolves. Let it boil on a low flame for about 5 minutes without stirring or until the mixture caramels.
- Remove the caramel from the fire and carefully mix it with the cream and liquor (if you use it). Return the pot to a low flame and stir until the ingredients mix well. Withdraw and let it cool.
- Whip the egg whites till they harden and mix with the dough with soft circular movements. Heat enough oil in a thick pan; then grease the banana with the lemon juice and dip them into the dough, let the extras drip off and fry them for 2-3 minutes or until they turn brown. Let napkins absorb the oil from them and serve the fried banana immediately bathed in the caramel.
