Baked Ricotta Cheese Pie
Ingredients 180 grams of cookies 90 grams of dry coconut, not sweetened 125 grams of melted butter 4 eggs 250 grams of sugar Limejuice and grated peels of 2 lemons 500 grams of ricotta cheese 60 grams of chopped, peeled almonds Praline, for serving Whipped cream, for serving
Preparation
- To prepare the base of the pie crush the cookies and the coconut until they are well ground. Put them in a bowl and mix with the melted butter. Place this dough in a 25-centimeter mold and keep in the refrigerator until it solidifies.
- For the filling, beat the eggs in a recipient until they are spongy. Gradually add in the sugar and then the limejuice and the grated lemon peel.
- In another recipient mix the ricotta cheese and the peeled almonds. Little by little go adding in the egg and lemon mixture on the top of the cheese.
- Pour the filling over the prepared pie base and bake it at a moderate temperature of 190 degrees for 40 minutes. Let it cool. To serve, decorate with the whipped cream and praline.
