Apricot Mousse Recipe
Ingredients: ½ a can of apricots in syrup 8 egg yolks 1 dl of apricot syrup 1 tbsp of powdered sugar 1 tbsp of powdered liquor
Preparation: Strain the apricots and mash them until they become a very fine puree.
Beat the egg yolks with the syrup and the sugar in another container. Pour this mix into a small pot and cook in a double sauce pan to thicken it, stir it constantly with a wooden spatula. Once the cream is ready, add the alcohol and the fruit puree. Stir it all energically and pour the cream into cups. Place into the freezer and serve very cold.
The cups can be sprinkled with a little alcohol at the moment of being served.
This mousse can be served with bread and butter.
