Apricot and Coconut Rolls Recipe
Ingredients 125 grams of softened butter 2/3 cup of apricots, cut in pieces ¾ cup of extra fine sugar 2 eggs 1 cup of whole-wheat flour ½ cup of white flour ¼ cup of grated coconut 1/3 cup of milk
- Preparation time: 30 minutes
- Baking time: 50 minutes
Preparation
- Preheat the oven at a moderate temperature of 180 degrees C. Grease two cylinder 8 by 17 centimeter baking pans with melted butter or oil.
- Put the rest of the ingredients in a bowl and beat them with an electric mixer at the lowest speed until all the ingredients are well mixed. Then turn the speed of the mixer up a notch and continue mixing it for another 2 minutes or until the mixture has become homogenous and has changed color.
- Put the mixture in the two prepared baking pans in a uniform way. Cover them with the previously buttered tops and put them in the oven. Bake the rolls in vertical position for 50 minutes or until when sticking a wooden pick in them, the stick comes out clean. Let them sit for 10 minutes. After this, flip the rolls onto a metal rack and allow them to cool. Serve it out hot or cold cut in slices.
