American Meringue
- For: 6 servings
- Time: 90 minutes
Ingredients: 4 eggs 250 grs sugar ¼ liter milk Butter
Preparation:
- Mix the stiffened egg whites with 100 grs of sugar.
- Fry 100 grs of sugar until it’s at a foamy caramel form, to which it is added to the stiffened egg whites slowly beating continuously.
- Butter a mold.
- Pour the meringue into the mold and put into the low flamed oven in a double sauce pan.
- Remove from oven when the pinching needle comes out clean.
- Beat the egg yolks with 50 grs of sugar.
- Heat up the milk and add the yolks.
- Place on the fire in a double saucepan stirring it with a wooden spoon without letting it boil.
- Remove the meringue from mold and place on a dish; cover it with the cold cream.
