American Meringue

  • For: 6 servings
  • Time: 90 minutes

 

Ingredients:
4 eggs
250 grs sugar
¼ liter milk
Butter

Preparation:

  1. Mix the stiffened egg whites with 100 grs of sugar.
  2. Fry 100 grs of sugar until it’s at a foamy caramel form, to which it is added to the stiffened egg whites slowly beating continuously.
  3. Butter a mold.
  4. Pour the meringue into the mold and put into the low flamed oven in a double sauce pan.
  5. Remove from oven when the pinching needle comes out clean.
  6. Beat the egg yolks with 50 grs of sugar.
  7. Heat up the milk and add the yolks.
  8. Place on the fire in a double saucepan stirring it with a wooden spoon without letting it boil.
  9. Remove the meringue from mold and place on a dish; cover it with the cold cream.
