Ace of hearts

Ingredients 6 eggs 70gr ground almonds 400gr Powdered sugar 4 tbsp of cocoa powder 250gr Butter
Preparation
- Separate the yolks from the whites of 4 eggs, Beat egg whites until they stiff, add the ground almonds slowly to not lower the stiff ness of the egg whites.
- Butter four big squares of aluminum foil and place over the previous preparation, giving to it the shape of four discs of 20cm. in diameter and 0,5cm, in thickness.
- Cook for 15 min. at a low flame oven. For the cooking to be in its right point, the heating of the oven must be warmed previously to maintain the same temperature during its full cooking process.
- Take the four biscuits out of the oven and let them cool off.
- In that time put two egg yolks in a casserole add the 150gr powdered sugar and heat it in a double sauce pan, stirring it continuously with a wooden ladle.
- When hot, add two tbsp of cocoa powder and 190gr diced butter.
- Continue stirring until all the butter is mixed.
- Remove the casserole from the fire and stir until completely cooled off.
- Butter three biscuits with an abundant amount of the preparation, place one on top of the other and cover with the fourth biscuit.
- Decorate this last biscuit cutting it in two equal parts one with powdered sugar and the other with powdered cocoa with the help of a heart shaped mold.
Practical advice The decoration can be more on a personal preference; you can make the shapes of rhombus, squares, bars etc.
